MELBOURNE’S DINING SCENE is undeniably next-to-none. The late great US chef, writer and broadcaster Anthony Bourdain often quoted the Australian city as a favourite foodie destination of his and Nigella Lawson is a frequent visitor. Melbourne also often features in the world’s best lists for its thriving food and beverage culture — notably, it’s coffee. But with so many delicious options in the cultural capital, it can be a challenge to choose that special occasion venue or Saturday night go-all-out experience.


We round up the best luxury bars and restaurants in the city that always eats, to help you book the best Melbourne evening yet.

Saint Hotel

London, Paris, New York? You’ll likely blink twice (maybe, three times for good measure) when you enter the experience that is Saint Hotel. The much-loved Saint building on the iconic bayside Fitzroy street epitomises sophistication with a swish new fit-out and fine-dining menu. Following two-and-a-half years of renovations and plenty of changing personalities (most recently, it was a night club), Saint Hotel has re-opened as a dining mecca. There’s five distinct venues for every mood, appetite (and aesthetic) with Saint Dining, Saint Bar, The Vault, Bar 54 and Stellas, as well as private and semi-private dining rooms. While its cuisine is modern Australian, Saint Hotel’s vibe recalls that of award-winning, celeb favourite restaurant Hakkasan. It’s alluringly dark and moody, yet buzzy and energetic. Electrifying background music plays and convivial chatter is most welcomed.

Saint Dining, the venue’s pièce de résistance, invites guests on a tantalising food journey within the iconic Saint Hotel atrium while enjoying an open-kitchen experience. You’ll be seated on black buttery leather banquette seats while indulging in a most hedonistic menu developed by executive chef Gary Lai. Its protein-focused and produce-driven, with most ingredients heroed on a Josper charcoal grill. Delectable entrées include the Hiramasa Kingfish Crudo and Grilled Jumbo Mooloolaba Prawn. I also thoroughly enjoyed the recommended Slow-Roasted Leek. As for mains, the Apollo Bay Crayfish Mafaldine is heavenly, and the 250g Eye Fillet but a succulent delight.

As for the other spaces, the ground floor Saint Bar offers an extensive drinks selection with creatively-concocted cocktails as well as a bites list in a smart casual setting. Also on the ground floor, the street-facing The Vault will act as a bottle shop and intimate tasting venue. Upstairs is a little retro chic fun with Bar 54, a cheeky tribute to Saint Hotel’s address at 54 Fitzroy Street and that infamous New York bar which needs no introduction. Adjacent is Stellas, Saint Hotel’s inventive cocktail bar and listening lounge which promises to provide a sensory experience like no other with huge loudspeakers by Pitt & Giblin. There’s also a rotating lineup of local and visiting DJs playing on Friday and Saturday nights. Stellas is set to open Friday, May 5. Spearheaded by General Manager Mrinal Beekarry, Saint Hotel is the all-encompassing destination to start the night which is likely to end at its 3am closing.

Melbourne has no shortage of rooftop bars but Beverly is certainly the sexiest. Yes, it’s worthily flooded your socials feed. The new South Yarra venue is the fashion lover’s best excuse to don their most lavish sequinned ‘fit or wear a stylishly comfy white shirt, jeans and oversized sunnies. There’s no dress code, just good glam vibes. Set within Chapel Street’s latest luxury development, Goldfields House, Beverly Rooftop aims high to be the dining destination of Melbourne — and at the 24th level it certainly achieves that.

Inspired by the Instagram-friendly rooftop bars across glitzy Los Angeles, founder Cameron Northway (also of LOTI and Rocker Bondi) along with partners Marco Gattino and Lachlan Thompson have replicated the Southern Cali aesthetic — but with a Melbourne mindset. The 200-seat space, also dreamt up by creative director and model Emily Gurr in collaboration with Mitchell & Eades, is fitted with blush-pink chairs and green-and-white-striped lounges, echoing the chic furnishings of the Beverly Hills Hotel, while utilising a retractable glass rooftop. You can therefore enjoy fine dining and wining — although, we urge you to consider the cocktail menu — during Melbourne’s rain, hail or shine. Sunset Bellini’s are a Beverly signature with a clear purpose, Caffe Rosso is a caffeinated take on the classic Negroni and Mayahuel blends the celeb-fave Casamigos tequila and mezcal with the sweet kick of pineapple and lime (my personal favourite).

The menu fuses La La Land favourites such as classic crumbed mac ’n’ cheese with truffle gouda, fries and sumptuous seafood options; while using the best Australian produce. Spearheaded by chef David Ball (previously of England’s Le Manoir aux Quat’ Saisons and the Yarra Valley’s Dominique Portet), Beverly’s standouts include its small plates dish of prawn ceviche with jalapeño cream, as well as its larger main of marron and spanner crab pasta. For the vegan foodies, a plant-based chicken pappardelle with smoked paprika and chilli also proves popular … and tasty. Beverly may be the most talked-about Melbourne venue among the influencer scene currently, but I have a strong feeling it won’t be a fad.

Department store dining has elevated ten-fold with Chadstone’s latest indulgent foodie offering, Cityfields. Situated within one of the country’s leading shopping destinations, Cityfields is an all-day diner which could very well suit the opulent settings of Harrods or Saks Fifth Avenue. The European-style brasserie has been developed by the respected team behind South Melbourne’s restaurant and events space, Half Acre. Across a colossal two-floors, Cityfields caters to 600 hungry (and discerning) shoppers from midday to the late evening. But even if you’re not in the mood to shop, it’s a venue certainly worth checking out.

There’s a light and airy central public bar, sky-high ceilings and indoor and outdoor seating options — including a rooftop garden with panoramic views of the city skyline — to accommodate for Melbourne’s rain, hail and shine lifestyle. Designed by Pasquale Cook and Studio Manifold, the space welcomes diners with a grand entrance featuring large timber double doors and awnings, reminiscent of a Parisian brasserie. A European theme continues throughout with warm interiors, splashes of green and a vintage Murano chandelier suspended above a staircase.

The menu equally evokes authenticity and charm, while showcasing the best of seasonal produce. There’s an array of snacks and share plates to start such as olive gildas with guindilla pepper and anchovy or housemade potato cakes with goats milk yoghurt and sweet pickle relish; as well hand-made pastas and freshly-made salads. Larger meals include brasserie classics, with a variety of steaks served with French sauces, as well as the most indulgent cheeseburger. Desserts are also a Cityfields experience with a roving cart dedicated to the unmissable course. There’s daily housemate cakes, slices and tarts to choose from. Of course, everything is washed down with a thoughtfully-curated drinks and cocktail menu, guaranteed to be “the perfect Insta moment.”

The rooms, while comfortable and pleasantly sparse, offer plenty of luxury amenities. There’s premium pillows including those made from duck goose feathers and innovative gel to Nespresso machines with Code Black coffee. If you fancy your morning brew with some much-needed chilly Melbourne fresh air, there’s a slew of hip coffee joints just at your doorstep, such as my personal recommendation of the nearby Rowena Corner Store. But The Motley has you food and beverage covered all day, with their exceptional on-site diner Ms Parker and cocktail bar, Ms Threads. Think Modern Australian cuisine with a flavourful and cheeky twist.

Unexpectedly delicious options include bites such as Kangaroo tartare on a Vegemite cracker, as well as entrées like the Hiramasa kingfish with blackened onion ponzu and jalapenos. The mains are equally tantalising and generous, with a whole rainbow trout served with indulgent beurre blanc and the most succulent Southern Ranges Angus beef. Of course, all dishes are washed down with a huge selection of local and international wines but I urge you to try their Tiger Tommy’s cocktail — a delectable mango take on the classic spicy Marg. With the iconic MCG, Rod Laver Arena and Olympic Parks in walking distance and the buzzy Southbank precinct and city just a tram ride away, The Motley is an authentically Melbourne experience which doesn’t compromise on class.

Their menu showcases “small farmers, growers and makers who pride themselves on care for the land and quality produce”, which results in simple yet special meals — like a beautifully fresh pesto Genovese linguine, or zesty fried artichoke hearts. The minimalist menu is accompanied by a list of local and international wines available by the glass or bottle, with everything from South Australian shiraz to Southern Highlands orange wines — something to delight everyone.

The new wine and tapas bar brings a touch of Madrid to Sydney with its beautifully designed interiors and flavourful Spanish dishes. It’s equally suitable for your next friendly catchup or date night, with its cosy, romantic tables, bar seating and wine-shop-meets-bodega-meets-courtyard aesthetic. I speak from experience when I say it’s a place you can all too easily spend far too many hours at, enjoying the hospitality and comfort of the space. For food, expect small dishes that allow you to piece together a snack or a banquet, catering to vegetarians, pescatarians, carnivores and everyone in between — think cheesy, oozing croquettes; sea scallops on the half shell dripping with saffron butter; paper-thin slices of Jamon Iberico Bellota Puro; and anchovies with salsa Spinader, to name a few heroes. For drinks, choose from artful cocktails; wines by the glass (almost exclusively from female winemakers); or a list of over 50 wines by the bottle.

Their wine list is extensive — the cellar contains picks from the owners’ own wine collections, alongside drops from small producers and Australian staples — but they offer classic cocktails too (I’ve heard their martini is among the best in the city). And their food is impeccable, ranging from rich burgers and pastas to delicate tarts and freshly-baked focaccia. Back in Potts Point, discover Dear Sainte Éloise, the sister venue of Love, Tilly Devine and a self-described “place for wine and things to eat”. Its name reflects the simple pleasures of exactly that — wine and food — and is inspired by a George Orwell novel, in which the protagonist pleads, “Dear Sainte Éloise, if you exist, please send me some money. I don’t ask for much — just enough to buy some bread and a bottle of wine”. It’s a cosy, charming location, and its wine list celebrates bottles from across Australia and the wider world, complete with full descriptions of each varietal (a thoughtful inclusion for those who are amateurs rather than experts). Food is a delight, too, with menus changing with the seasons to celebrate fresh produce and new flavours, so you can return and find new delights to enjoy.

It’s walk-in only, but make it inside and you’ll be treated to a food menu of bar snacks, cheese and charcuterie, and small plates; as well as a wine list heavy on the natural and orange varieties. Cocktails are minimalist — though the Salt and Vinegar Martini, created with salt harvested from Bondi Beach, sounds well worth a sip — and vibes are relaxed in the 20-person space, which is equal parts cosy and airy.

A relaxed town just an hour north of Cairns, it’s known for its world-class restaurants and luxury resorts. Things to do in Port Douglas

Snorkel the Great Barrier Reef

With such close proximity to some of the best snorkelling spots on the Great Barrier Reef, booking a tour should be your first port of call. You can head down to the Port Douglas Superyacht Marina and find all the best tour operators in one place, which makes deciding where and when to cruise the World Heritage Listed reef easy.

We spent a day touring the Low Isles with Sailaway, which saw us swimming with turtles, enjoying the pure white sands of the islands, and snorkelling between coral gardens. Sailaway holds Advanced Eco Tourism accreditation and is one of five marine tourism operators participating in the Coral Nurture Program, which involves boosting live coral cover at reefs that have experienced a fall in cover. 

Eat fresh, local seafood

The restaurants in Port Douglas are plentiful, and many focus on local produce and seafood. Two top picks are Zinc, a Modern Australian restaurant with a focus on fresh fare like grilled tiger prawns and barramundi fillet, and Seabean, a tapas spot with an incredible paella selection featuring local seafood. 

Walk Four Mile Beach

While swimming is out of the question thanks to a long stinger season (dangerous jellyfish) and the possibility of crocodiles, Four Mile Beach, which stretches the length of Port Douglas, is a must-visit. The ideal time is sunrise, where you’ll see the pink-blue horizon slowly light up as the sun makes it way into the sky, but dusk is still a beautiful time to visit.

Watch the sun set at Rex Smeal Park

With its tall palm trees and uninterrupted views of the Coral Sea, Rex Smeal Park is the best spot for catching those spectacular Far North sunsets. Watch the sky turn from pink to orange, then head over to your dinner spot afterward. Another great place for spectacular views? Flagstaff Hill, which offers sweeping views of Four Mile Beach.

When is the best time to visit Port Douglas?

The high season in Port Douglas runs from Autumn until Spring, with temperatures hovering around 26 degrees celsius and humidity easing off. Basically, the best time to visit is when the weather is the coolest down south. Summer can still be enjoyable, but be prepared for higher temperatures averaging around 29 degrees celsius, and more chance of rain – Far North Queensland experiences monsoonal weather, and can be quite wet during summer.

How to get to Port Douglas

The easiest way to get to Port Douglas is to fly into Cairns, hire a car, and drive the hour north. Flights to Cairns are plentiful from most major cities in Australia. Queensland is a big state, so unless you’re planning on slowly road tripping up the coast, it’s best to avoid driving from the capital city of Brisbane – it’s a 19 hour trip, minimum.

Guy Grossi’s new Brisbane restaurant

Settimo at The Westin, Brisbane

Nestled in the centre of Brisbane city in the luxurious Westin Hotel, you’ll find the newest restaurant by celebrated Australian chef, Guy Grossi. Settimo — (“seventh” in Italian, referring to the number of restaurants the chef has now opened) — is a vibrant celebration of the Amalfi Coast that blends family-style values with intuitive service and an inventive spirit. The deceptively large venue seats 150 diners, who get to experience a delightful blend of Italian and Australian food culture, heroing local ingredients with a distinctly Italian flair.

Little nods to the Amalfi are dotted across the menu, most obviously in the notes of lemon that sing throughout. Menu highlights include Pasta al Limone, Scialatielli all’ amalfitana, Mozzarella di Bufala, Gnocchi alla Sorrentina, Spaghetti alla N’erano, Amalfi Lemon Chicken, Guy’s Papa’s Lamb and classic sweet finishes such as Settimo Gelato and Delizie Al Limone and Grossi’s Tiramisù. Having been lucky enough to sample most of these dishes, I can confirm that the entrées threaten to steal the show (try the caponata), the pasta is perfectly al dente, and the tiramisù (a recipe from Grossi’s grandmother that is satisfyingly ladled from a brimming dish) will have you loosening your belt to make room to finish it off. Excitingly, Settimo is also open for breakfast, offering the Mediterranean style buffet you wish every hotel could live up to (if you spot the cavolo nero and parmesan pie with its burnished olive oil crust, be sure to serve yourself at least one slice).

The venue itself also tips its hat to its Italian coastline inspiration, featuring tactile furnishings with split face stone, custom-designed terracotta and ceramic tile accents, and a colour palette featuring soothing muted tones offset by pops of pastel blue and lemon yellow. Altogether, the venue and the dishes make for an unpretentious dining experience that has details perfected to a tee (what could be more Italian?)

“We have created a journey for diners that is inspired by one of the world’s most aspirational destinations, the Amalfi Coast, coupled with the urban energy and sunny coastal atmosphere of the city. We’ve assembled a team of passionate and highly skilled experts who are ready and waiting to welcome diners to the venue,” said Grossi ahead of Settimo’s opening on February 23. The experienced team features Alessandro Pizzolato as head chef, Anthony Folio managing the floor, and Deniz Hardman offering perfect local and international wine pairings as sommelier.

Poh Ling Yeow’s salivating sushi-train experience

She’s a firm fixture on Australian television with the most infectious laugh, but Poh Ling Yeow’s food is no laughing matter. Although, her first bricks-and-mortar experience hosted at QT Melbourne is indisputably fun and flavourful. Fun-dining, to be exact. A sexier version of the classic sushi-train experience, Yeow has created an exotic menu in collaboration with Singleton whisky, titled ‘The Singleton’s Delicious Discoveries.’ While you won’t find sashimi on the conveyor belt, gourmet “snacks” include fried-chicken bao with kimchi and Kewpies, pandan-coconut sago shots and my personal favourite, the silken Szechuanese eggplant. Honestly, it’s heaven in a morsel.

Yeow explained to Harper’s BAZAAR Australia/New Zealand the unique menu is not only reflective of her wanderlust, but stems from a desire to entice the less adventurous.

“I’m unabashedly eclectic and love borrowing from cultures I’ve experienced travelling. I’m also a very textural cook. I love giving the less adventurous eaters a nudge into the unexpected, so in the dishes I’m serving you’ll find plays of hot & cold.”

While whisky may not be one’s first choice to pair with punchy Asian-infused flavours, Yeow implores diners to reconsider the liquor’s gentlemen club origins.

“If you’ve been hesitant about whisky in the past this makes for a superb introduction. You’ll realise it’s not always austere and serious but fun and versatile and something that can elevate a dining experience,” Yeow began. “It’s the approachable nature of The Singleton with its rich, fruity characteristics & subtle bitter notes — when mixed with something a little sweet and a little fizz, just makes such a great companion for robust Asian seasonings.

Nestled on the ground level of Melbourne’s eminent boutique hotel, the stylish and moody interiors of QT lend itself to Yeow’s intimate and sumptuous affair. ‘The Singleton’s Delicious Discoveries’ is perfect for date night, girls eve in the town or that shameless Sunday self-care.

“Although the dishes I’ve designed have some exotic elements, my priority was to capture the brevity of eating off a sushi train so “yum” was the main priority and small plates mean you have room to try 1 of everything!

Suntory BOSS Coffee, the ready-to-drink coffee company founded in Japan back in 1992, has launched the über cool TOKYO HOUSE on Crown Street for a limited time. Rather than a cafe hangout, the space plays host to a number of unforgettable events featuring exclusive cocktails, curated menus and noteworthy Japanese tastemakers in design, music and, of course, mixology. Maya Hirasedo, a Japanese RnB soul artist raised in Australia who’s performed on the runway and in New York City, is part of the edgy lineup.

Open day and night, TOKYO HOUSE is set to amplify its signature Japanese flash brew process — which has seen it earn the title of number one coffee can in Japan and Australia — with its experiential pairings, performances and services. Nomads, freelancers or those with a penchant for cafe-style working can also book a co-working space in the minimalist Tokyo coffee house inspired location, complete with workspaces, charging stations, and super-fast WIFI.

“The Japanese are celebrated for their craftsmanship and endless pursuit of quality. AALIA’s esteemed chef series

One of Sydney’s top Middle Eastern restaurants is continuing its acclaimed kitchen takeover series this year. AALIA, which earned two hats within months of opening in early 2022, is sharing the food love with a rotation of celebrated chefs starting with Ben Williamson, co-owner of the Brisbane-based, wood-fired restaurant Agnes. The one-night-only experience will offer Sydney diners the tasting opportunity for bespoke Middle Eastern and North African dishes made in creative collaboration with AALIA and the chosen chef.

AALIA’s Executive Chef, Paul Farag will team up with Williamson on Monday, February 27 with a menu bound to bring the heat. Lovingly showcasing their aptitude for ancient traditions, spices and fire techniques, guests can expect Williamson’s signature dishes such as his harissa quail, as well as Paul’s Khorasan pita and Eggplant mes ‘a’ aha, alongside a selection of delicious Middle Eastern dishes for $110pp.

Then on March 20, AALIA will welcome Coskun Uysal from Melbourne Turkish restaurant, Tulum to their Martin Place hub for a charitable homage to Turkey. Tulum, which has been named the “Best Turkish Restaurant” by some of Melbourne’s top food critics, will donate all profits from their AALIA event to Ahbap — a platform raising funds for the devastating Turkey earthquake.

And if you’re unable to make either sitting, anticipate more local and international chefs to helm the AALIA hot plate throughout the year.

“After collaborating with some of my industry friends back in 2022, I’m looking forward to bringing the chef dinner series into the new year as AALIA continues to grow. AALIA is all about trying new things to find the best flavour combinations possible, so I think this is not one to be missed,” AALIA Executive Chef, Paul Farag said.

Serai has been around for less than a year, but already it’s gaining a stellar reputation. Even when I’ve casually asked Melburnian tastemakers for new foodie recommendations, they always cite Serai as a must-visit destination. The modern-Filipino restaurant, spearheaded by chef and co-owner Ross Magnaye, is tucked down a classic Melbourne laneway and aims to introduce Aussies to a largely underrepresented cuisine down under. Last November, Serai was even named Best New Restaurant of the Year at The Age Good Food Guide Awards 2023.

With its glowing reviews from industry insiders and diners alike, it was only a matter of time before Serai made its major festival debut. Launching onto the tantalising 2023 Melbourne Food & Wine festival lineup, Serai is joining forces with Masterchef alum Diana Chan for a vibrant dinner of Filipino and Malaysian cuisine on Sunday, March 26. The pair — whom are close friends — will be collaborating on dishes reflective of their cultures, and unifying it through flavours and fire. If you’re after a quiet, moody fine-dining experience — this isn’t for you. Diana Chan X Serai Kitchen will be loud, fun and full of colour and naturally, flavour.

“Ross and I met five years ago at HWKR and instantly hit it off,” Chan of her first meeting with Serai Kitchen chef and co-owner Ross Magnaye. “I’m excited to work with Ross because we get along as friends and always have a great time cooking together and as a result, the food that comes out of the kitchen is always full of love and cohesive.”

But trust us, it is well worth the slight journey up. The luxe bar is spread across two levels. The first, a cozy art-deco-style space packed in with leather booths, old books and wooden accents. The second, a rooftop, lined with greenery and boasting an upward view of Centrepoint Tower.

While there are plenty of beer and wine options to enjoy, Old Mate’s Place really specialises in cocktails. They also have a fabulous house gin, a personal favourite, and a selection of olives, cheeses and deli meats to enjoy. Just make sure you get in early — the bar is a favourite among Sydneysiders and is almost always packed out within hours of opening.

The new jewel in Queensland’s luxury accommodation offerings just got even more luxurious.

QUEENSLAND’S GOLD COAST has reached new levels of luxury, with the new Langham Hotel officially celebrating the grand opening of all its services in entirety in November of 2022 — and just four months later, it now boasts a hatted restaurant.

T’Ang Court, located within the Langham, Gold Coast, is the most recently opened on the list of 23 Gold Coast venues to have received one Chef Hat in this year’s Australian Good Food Guide Chef Hat Awards. The Cantonese fine dining destination has quickly earned an impressive reputation as a mainstay in the local dining scene, with the Chef’s Hat recognising this achievement.

After formally welcoming first guests in June 2022, the hotel quietly opened an additional three guest experiences to in-house guests and locals, now unveiling the mix of luxury dining, bar and wellness offerings to the public as they officially open for business.

The signature feature of Langham hotels globally, the luxury Chuan Spa Gold Coast, is now open too. Welcoming bookings from November 23, the Chuan Spa offers an oasis of peaceful ambience with a range of treatments including facials, massages, scrubs and warps, hand and foot therapies, and beauty treatments, with each guided by traditional Chinese medicine and the Five Elements of wood, fire, earth, metal and water.

All can now discover and enjoy T’ang Court, a signature Michelin-starred restaurant; Coral Moon, an open-air cocktail bar; and Chuan Spa, a peaceful and ambient location for holistic and indulgent wellness offerings guided by Traditional Chinese practises. These new additions join the existing line-up of lunch and dinner restaurant Akoya; Langham Afternoon Tea destination Palm Court; the central Lobby Bar; and 26&Sunny, a local hotspot for beachside coffee and food.

The hotel will be hosting a series of events to showcase their new dining offerings, including a grand opening gala function held in the Diamond Ballroom, supported by partners Porsche, BVLGARI and Moet, and welcoming special guests, Queensland Premier Annastacia Palaszczuk, Queensland Tourism Minister Stirling Hinchcliffe and Gold Coast Mayor Tom Tate.

T’ang Court, a Cantonese fine dining destination was one of the first offerings at the Langham to open in recent months. Inspired by China’s golden age — the Tang Dynasty — T’ang Court is internationally renowned and Michelin-starred in its sister restaurants across Asia. Presenting elevated culinary experiences, seasonal delicacies and exquisite flavours crafted with the finest local produce, the restaurant has become one of the most luxurious spots to dine on the Gold Coast.

The 80-seat destination features luxe furnishings and contemporary designs, with bespoke abstract art crafted by Australian-Chinese artist Lindi Li. The mouthwatering menu will feature such specialities as a three part ode to traditional Cantonese duck (Duck Pancake with Chef’s special hoi sin sauce, duck bun with lychee and raspberry sauce, with supplemental caviar, and sliced duck breast and leg accompanied with plum sauce); the delightful centuries-old delicacy of sauteed pearl meat with ginger, shallot and Asian greens; and a locally-inspired flavour explosion of spicy black tiger prawn with roasted garlic. Located on the third level of the Langham, reservations are now open from Wednesdays to Sundays each week.

‘Mille Vini’ translates to ‘a thousand wines’ in Italian, so naturally, expect an extensive list of delicious drops. There’s a focus on local producers with Italian varieties, celebrating the restaurants Italian inspirations and Australian roots. A private dining area and large group booking capacities make it the perfect venue for any occasion.

Mr. Wong

Hirofumi Fujita, specifically, is the man in whose hands your culinary fate will rest. He combines traditional and innovative takes on Japanese cuisine, with the likes of spiced coconut and cauliflower soup, Glacier 51 toothfish marinated in miso, torowith caviar, and refreshing yuzu sake sorbet among the menu regulars. Take a walk through Western Australia’s floral landscape

The wildflowers of Western Australia are a must-see for local travellers.

SPRING has well and truly sprung. And while the East Coast’s entry to warmer months may have been marred by yet another La Niña, over in Western Australia, the season is blooming.

Throughout the lockdowns of the past few years, many have gained a greater appreciation for the magnificent sites to travel to on Australian shores. And let it be known, wildflower season in WA is a spectacle you’ll be sure to add to your Antipodean bucket list.

WA has the world’s biggest collection of wildflowers. Each season, over 12,000 species of flora (more than half of which are found nowhere else on the planet) burst into bloom. The state’s wildflower season lasts for six months, beginning in June in the north before sweeping throughout to end in the south coast in November. Accordingly, you have ample time to book in your annual leave and make your way over to take in the magnificent sites.

But if you’re a little pressed for time and have your sites set on a specific spectacle, fret not. Three of WA’s top floral experts have offered their guidance. Below, regional Western Australian artist Helen Ansell, floral designer Matthew Landers and Creative Director of Perth’s ‘Fox and Rabbit’ florist, Rebecca Const, weigh in on their personal favourite flowers in the state and where (and when) to find them.

The most magnificent wildflowers to seek out in Western Australia

The resplendent Wreath Flower (Leschenaultia macrantha) is totally unique to WA. They only grow in a few select locations in the state’s Wheatbelt region, specifically near the towns of Pindar, Mullewa and Perenjori.

“I love that they look like colourful wreaths, laid as tributes to the desert around them. I am lucky to have these beauties only a stone’s throw from my backyard,” says Ansell.

Another favourite of the artist is Native Blue Cornflowers (Brunonia australis). The delicate flowers, which bloom in a spectacular lilac colour, do grow across the entire continent, though Helen notes they are particularly captivating against WA’s red desert backdrop.

Const’s current favourite is the Yellow Feather Flower (Verticordia Chrysantha), a vibrant treasure that grows in low shrub. She’s also a fan of the Heart-leaf Flame Pea (Chorizema cordatum), which can be found in forests in the state’s South West. “Not a cut flower, but this beautiful bright orange and hot pink pea cannot help but turn heads,” she explains.

A third and firm favourite is the flowers of the Eucalyptus Macrocarpa, which bloom in glorious red and yellow bursts. “Statement branches can usually be purchased year-round, but this plant only flowers for a very short time in spring,” Const explains.

Landers, who has been a veteran of the floral industry for almost 20 years, favours Boronia (Boronia heterophylla). The fabulous pink flower, which blooms throughout Kings Park and the Botanic Garden during Spring, is particularly special.

“The intoxicating fragrance and short season makes it such a unique natural treasure,” Landers says.
